Another one to credit to Mercy Ships and Kelsey’s breakfast genius (although I think it was served with lunch, madness, it makes absolute sense at breakfast), this is so straightforward and super-quick to prepare. It’s naturally sweet, creamy, with crunch from the apples and softly chewy raisins.
Really easy, quick, filling and delicious breakfast.
Recipe: For one
1 Apple, chopped into 2cm chunks
1.5 tablespoons rolled oats
1 Tsp cinnamon, mixed spice or both
1 tablespoon raisins (surprisingly important)
1.5 tablespoons yogurt (Greek, or equally nice, and definitely not low-fat)
Mix all together in a bowl and eat.
Depending on the oats you use (i.e. if you use jumbo oats or like your oats particularly fine), it may be worth grinding them a little in a pestle and mortar first, to create a more varied and soft texture.
